Hass Avocado Tomato Skewers

Recipe developed by Hass Avocados from Mexico

Ingredients
Tomatoes:
• 10 smaller sized tomatoes, halved and scooped (save the pulp for the guacamole)
• 1 package thin breadsticks

Guacamole:
• 2 ripe Hass Avocados from Mexico, halved and peeled
• 1 cup tomato pulp (from above)
• ½ cup finely minced onion
• 1 tablespoon freshly squeezed lime juice
• ½ teaspoon salt
• ¼ cup chopped cilantro


Instructions
Cut tomatoes in half and scoop out pulp to form a tomato shell. Set the pulp aside in a small dish to use in the guacamole.

Brush lime juice and olive oil inside the tomato shell, and allow to sit while preparing the guacamole.

Peel Hass Avocados from Mexico and mash them with a fork.

Add remainder of ingredients and mix together.

Scoop the guacamole into the tomato shells, and add a breadstick as a toothpick.
